For this spaghetti you will need an Italian accent and some wine...but you will also really need:
250g of fresh spaghetti
200g of prawns
200g of prawns
8-10 cherry tomatoes
2 cloves of garlic
4-6 stalks of asparagus
2 glugs of white wine
Salt & Pepper
Olive Oil
Coriander
Butter
Butter
-Put a pan of salted water on the hob and whilst it is boiling chop your tomatoes and asparagus, I chop my asparagus at an angle so they make spears, but that is just me being fussy.
-Either using a garlic crusher or a knife, finely chop your garlic gloves and add them to a medium heated pan with a spash of your olive oil.
-When these start to sizzle away (try not to let your garlic burn) add your tomatoes, asparaus and a splash...or two of wine, then after five minutes, add your prawns.
-Cook for about 7 minutes and then add you prawns. I cheat and use ready cooked but you can use raw if you like, just make sure they turn a beautiful shade of pink.
-Lower the heat down a touch, season with salt and pepper and add your coriander. Stirring occasionally.
-Add your spaghetti to the boiling water and cook for 4-6 minutes, test a strand to see if it's soft after this time. If not, cook for a further two minutes.
-Drain your pasta and pop it back in to the pan adding a very small amount of butter, stir in to melt.
-Then add your other pan to the pasta and stir in.
-Season to taste with salt & pepper and enjoy.
-You could add garlic bread or a side salad, this amount feeds two but isn't a huge portion.

This looks delicious Gem! And really simple which is a huge plus for me; hate cooking complicated meals when I've had a long day at work. Not a million and one expensive ingredients either, win!
ReplyDeleteI'm deffo going to give this a go, although I may substitute the prawns with salmon as not a prawn fan... I think that would still work wouldn't it? And with hot garlic bread, yum yum yum!

This looks so delicious! I instantly get hungry, I'm a huge pasta lover and Prawns with pasta and cherry tomatoes is such a good combo! I normally always make this but instead of the coriander i use basil, but i'm definitely going to try it with some coriander!
